Anyone else noticed since that last core update whatever route and whatever time day you always get this Hazy fog out of no where.

It’s not since the update, it’s just that the season has changed. Dynamic weather has four seasons and the second season starts on April 1st so if you always play with the date set to the default (the date is the date you are playing) you will get the spring season now and fog is more likely (far too likely) to happen.
It's been like this since TSW3. You can pick a service at 2pm July 1st starting with clear skies. Give it 15 mins and there'll be either heavy fog or a full on supercell thunder storm lol
I launched TSV without a real weather program and was very surprised that a clear sunny day quickly turned foggy. What unpredictable weather, though.
