It seems Epic wants to download ALL owned content by default, not just the core game. I've got no unlimited space, so I would like to just download the core, and then manually select the DLCs I want to install (this worked well with TSW4 on Epic). Can anyone point me in the right direction?

I know it's too late, but I can only recommend to use the Steam version.

It has a refund window of two hours (good for testing DLC), all mods work with it and it has a superior DLC management system.

    Most user friendly platform.

I see many Epic users being left alone with their questions, due to it not being the most used platform.

In your epic-library, click on the 3 dots and chose Manage-add ons

Problem is, that option is only available after the game downloaded/installed. This option is not there when you want to install the game (only lets you 'explore' addons, which takes you to the page where you can buy DLCs).
