On series x I tried to stay in a single session on riviera line for as long as possible on my third service the textures started to go so I saved the game went back to the main menu and loaded the save back up while this fixed the textures the left side HUD that tells you speed, speed limits and distance to objective had vanished and nothing I did in the settings would bring it back. Do console players have to go back into timetable selection every time we complete a service?
No, you haven't to go back into the timetable selection, however with all the issues of the game, I would advice to do so. I almost never use the save option, I also don't know how reliable it is nowadays. If you now start a new service from the timetable, does the hud comes back?
The short answer is yes. When you save a game, after you have already finished your original service, the objective data for any subsequent services you might drive is not saved. So it is essentially pointless to save anything after you have finished your original service. This is a well-known and longstanding problem that I think affects all systems including PC. For Xbox the situation is actually slightly better, because you can use quick resume to put a play session on hold, and keep stringing along services that way. However, as you probably already know, that will do nothing to solve texture problems. Good luck!
