No clue what I'm doing wrong, but when starting a journey, I do the procedure as explained in the tutorial. However, I keep hearing air flowing from the air brakes, even though the needles on the gauges show no change in air pressure, and the train is already moving (and no brake force applied).

Anyone else experiencing similar problems and anything I can do to prevent/fix this?

Try pushing Q? I think that's probably the audible warning. You may or may not need to be in the off/release position.

I'm gonna try again and write down step by step what I do and what happens.

Train is completely silent when I start a service.
I enter the control key and set control switch to "ON".
    Train is still silent
I enter the direction switch and set the key to "INT".
    Train is still silent
I set the Traction Brake Control one notch down to "Emergency"
I hear a constant air flow.
    I press Q
I still hear a constant air flow.
I set the direction switch to forward.
I open the doors via the TAB menu and close them again.
I set the Traction Brake Control one notch down, wait a second and press Q, and repeat this process.
I still hear the constant air flow.
When Traction Brake Control switch is set to Rheo 1 Hold (that's notch 1 brake on the HUD), pressing Q finally stops the air flow.

So, it seems this does fix the problem, trick is to not set the Traction Brake Control from Emergency to "Off and Release" directly, but do it slowly and press Q at the right time (is that notch 1 on HUD?).

Before you switch to FORWARD put it into INT, brake to OFF & RELEASE and then click Q. Air flow should stop. The pop it Into forward and go go go
