I know that the total train weight and length is displayed in the in-game consist editor, but is there a way how to display it while driving? It would be useful in scenarios where you are often coupling/uncoupling and want to check what you are currently pulling...

You can check with the F3/F4 HUD

Can you show me where exactly? I don't see it anywhere...

I have looked on the F3, F4 and F5 HUD but none give any info on train length or weight

The F3/F4 HUD will only give you a visual representation of the stock you're pulling, including engines (the bigger blocks) and the non driving stock (the smaller blocks)
You could go into coupling view in either of those and it changes to the name for each item, but this doesn't tell you weight and length, either per component or in total

In "Smokebox" locos, pressing Ctrl Shift R gives you a "Performance Report" pop-up that includes consist length (in feet) and weight (in short tons).
