London to Ashford is London to Ebbsfleet with one more stop (about 20 minutes further on), and the Kent Countryside in that area has only two decent features, the Medway Valley Viaducts and the Bluebell Hill tunnels. Other than that you're running close to or alongside two big roads and there's little else to see (no decent towns, no tourist attractions etc)

The problem with only going to Ashford would be that the mainline traffic would literally be there for a couple of miles on an adjacent track (AI only) so there would be no variety of play

With regards to Eurostar, they don't license their stuff, so wouldn't get Eurostar trains in game, and they don't stop at any stations outside of London at the moment (bypassing Stratford, Ebbsfleet and Ashford), so the timetable would either have to be made up, old or some guess at future stopping patterns.
