Recently I've launched the game after 4 months. When I finally got to to the main menu it prompted me to create a new profile and I did so. After completing the tutorial I saw that all of my 2 years of progress had been wiped out entirely. I haven't done anything to the game files, just installed an update. Is there a possibility to restore my profile, or is it already too late as I've created a new one?

These files are stored in ..\Documents\My Games
No chance to restore if you don't have your own copy.

There are a couple of .sav files in TrainSimWorld2\Saved\SaveGames dating back to around last time I played the game on my old profile.

I am afraid, creating a new profile overwrites crucial files.
My SaveGames folder looks like this:

Strange, I have none from my new profile.

Search your PC for another TrainSimWorld2 folder (with the new files, probably).
Make a copy of the old one ASAP :)
Copy-paste old files to the 'new place'.
    There is a chance :)

Maybe you logged into Windows as a different user? Check the path, it has the username you used before.
    for example C:\Users\brebl\Documents\My Games\TrainSimWorld2\Saved\SaveGames

A different path (because the user) is a different folder from the perspective of the game.

    C:\Users << username

And it actually solves the issue with ETS2 as it was looking for the mods folder in a different user!
