One thing I've learned is that I need to drive my boat slow so that I don't overshoot the large schools of fish or the large icons for what I am assuming is a monster fish.
When a fish appears on the right side of your fish finder it means you have just passed over it. When travelling at speed that means you will need to go back over where you have travelled to find area that the fish is in.
