The German routes are fast becoming my favorites so I can definitely recommend Ruhr Sieg Nord and Main Spessart Bahn.
As Gamborg says, Ruhr Sieg Nord is your best option. It has the fewest bugs, a decent length route, lots of rolling stock and a mix of freight and passenger services/scenarios.
