Just got NTP and am loving it (should have got it sooner!) however when driving the 101 which is a great challenge it sometimes shuts down all engines after braking to a stop? any ideas on why this is?

Are you sending the reverser key past "reverse" and into the off position? Off the top of my head...
Just leave in "forward" all the time.

when you set off the brakes must be in release. and after a few yards or when you have exited the station i always put the brakes into lap. then they are ready for use. when you have used the brakes for braking always put them back to lap because if not they will continue to brake. so put them into lap. when you have finished braking completely go back to release. then lap. i hope i have explained this easy for you to understand what i mean
