I want to play a service in a winter blizzard but I know it's simply going to be a pain in the buttocks getting up the hills

Thankfully there are some locos parked by the turntable at Cumbernauld

If i time it correctly, can I stick a loco on the back of my consist without affecting the ability to complete the service?

One of the things I enjoyed doing in TSW was doing a service, but using the locomotives and wagons that were located in the same yard and were accessible by manual switches. For example on Tees valley I would start a steel freight service but instead of just connecting to one set of wagons I’d connect to two. I was still able to finish the service and get points for it. The only one time this worked weird was on RSN. When I got to the stop point at the end of the service, it told me my consist was to long and it actually tried placing me on spots in the yard. It was actually fun to see it try to stick me in all of these spots. The short answer is YES!
