I think the Moffat sub from Denver to Granby would be great! Steep mountain grades, tunnels, great scenery. Plus all kinds of different freight from UP and BNSF (I know there are some copyright issues with BNSF outside the US though,) and let's not forget Amtrak's California Zephyr and the Winter Park ski train!
