Is there any way to get a list of which rolling stock was installed with each route DLC?
I have 360 gigs in my TSC folder and have long since forgotten most of what came with what.

Also, if a route DLC is uninstalled (via Steam) will it remove rolling stock that came with it?
If the answer is yes, then what happens if that rolling stock was also installed along with another DLC which is still installed?

Similarly, if I delete an old DLC that also installed the (Free) Euro & USA asset packs, would the asset packs also be removed. Of course, many other routes need those packs, including some that did not come with the assets packs by default.

I realise that a lot of rolling stock comes as separate items and can be ticked and unticked in the Steam GUI. But I assume some (or maybe lots of) rolling stock is not sparately listed and actually came in the route DLC package.

I'm looking to clear out a ton of DLC which I will never drive again but, of course, I don't want to lose vital rolling stock, especially as many items are needed for third-party scenarios.

Not really, there was a recent thread discussing extracting it.
Ideally TS Tools or something similar open source could include the feature, and then you could run it for yourself anytime.

There is strong correlation between asset folders and DLC, not definite, though. So one has to do a bit of research. Emphasis on bit.

Steam DLC correlates to Packages, which is a collection of Apps.
In the client you (un)install Apps - ultimately a collection of files: assets including trains, route data, scenarios. As you noticed, for various reasons (reuse, licensing) sometimes the content is split. Loco packs won't be removed unless you remove those specifically.

You can always reinstall Apps. Don't sweat it.
Unless you have issues with slow loading times, there is little point in selectively picking DLC.
You will randomly lose it and consequently have to cherry pick again.
Loading times are most affected by scenarios, actually. Removing All Aboard or Legacy Railworks Scenarios is effective.

If you want pristine installations, your best option is to keep your Steam installation as clean as possible, clone it anywhere, and play the clone. Also install 3rd party stuff (content, mods) there. You can have your Steam install on a HDD this way, it's just a (reverse) backup.

Removing assets will likely cause more problems than it cures. (The only gain in speed when having less asset folders is the Custom Consist Editor, which scans the whole Assets folder.) Any route will only load the assets that are activated for it.

Game startup loading times depend on the size of the scenario database = number of scenarios.
You can easily remove routes by moving them to a backup folder, but keep the assets installed (as other routes may reference them). This will not cause any problems.

As for uninstalling DLC, Steam will only remove the depot that is tied to the app you untick. If you untick Feather River, it will uninstall the U30B as it is part of the depot. If you uninstall a route that comes packaged with other DLC (separate Locos, European Loco and Asset Pack), these will stay.

They are listed as separate in the Steam DLC manager for the game, so unless you "untick" them too to be uninstalled, they will stay.

For example my current TSC installation on Steam Deck is only around 40 GB, with only the stuff left installed that I need (20 GB is listed as installed size by Steam and 2 GB is in the workshop directory, so around 18 GB from 3rd party). No problems encountered while playing on all of currently installed routes, with exception of some included scenarios that use the content I specially decided to uninstall to save space.

Yes, this is very true. I´ve tried it in the past and it just causes problems... one of the things I tried was to delete all versions of the BR294, BR 101 etc.out of all the different german routes or delete some really old routes. First of all: it increases the likelihood of steam kicking off a file verification. Secondly something always uses something in TSC. A freeware scenario or freeware route will suddendly be missing something if you start "cleaning things up". I got a two terrabyte SSD with my last build and now I can install whatever I want.
