Would anyone be able to tell me what routes are included for the different layers that are on the new German route and what each of the routes adds in terms of services i.e. from where to where and what times they run etc.
Basic HMA has about 325 services (53 ICE3 services, 272 for BR423), MSB adds 30 RE services with Dostos (15 with 146.2, 15 with cab car) and 14 mixed freight runs. HRR adds BR 425 with 32 RE services and RRO adds 13 container freight services. 155, 182 and RSN locos can substitute in some services but add no layers of their own.

There might be some exceptions in the early morning or late evening, but yes, they're running the whole way. They have a nice mix of routing as they follow the ICE path to Passing, then run about 10 km on the high speed tracks and then divert to the local tracks for the rest of the way to Augsburg.
I also see something about dynamic destinations so for example if you set Munchen as a destination on the 425 and will that train be displayed on the PIS in stations too?
If I remember correctly the station screens will show the correct thing, but the displays on rolling stock will not. Please note that if you are on console, these additional layers are currently locked and unavailable to play, but this issue is being worked on by DTG and will be solved shorly.
The station PIS is taking information from the timetable, not the train itself, so what you set on the train has no influence, also considering the fact Dostos and some units don't have the complete list of destinations. A new thing coming in with the HMA seems to be the PIS reacting to delays you have, which was not a thing when PIS first appeared on Bakerloo.
