So I was busy installing things into Train Simulator and loading it up anything with the EU Loco And Asset Pack would have no textures and models. All Kuju trains would not appear despite having GeoPcDx files. Multiple file verifications haven't fixed it. Reinstalling the EU Loco And Asset Pack didn't work. Reinstalling TS worked for a little but something I did made it happen again and I am struggling to push myself to reinstall everything for a second time. Is there a way of reinstalling RailSimulatorCore without reinstalling the whole game? I think I'd rather quit TS altogether than reinstall the game and my hundreds of gigabytes of mods again. I can only assume something in one of the mods is adding a file that prevents the Kuju assets from loading, but I have absolutely no idea of knowing what that file is.

Unfortunately there's hardly any information provided in your post to work on this. "Something I did"... only you know. There's thousands of things that could have gone wrong, especially on those assets which are not safely contained in an .ap archive.

Solving JustTrains issues was detective work.

To have a clean reinstall of the ELAP you'd need to manually delete Assets\Kuju\RailSimulator before reticking the DLC (but be aware that AP, SSS and JT install repaints there which will be lost and have to be reinstalled again)

Installing RailSimulatorCore is easy. Rename your RailWorks folder AND your appmanifest_24010.acf.
Start Steam (will show TS as uninstalled) - go to DLC manager and deselect ALL DLC then click install
Rename the folders and the appmanifest back. In your new folder you'll have all core files plus Assets\Kuju\RailSimulatorCore. (My advice: make an .ap file out of the RailSimulatorCore files. This makes sure no freeware addon overwrites stuff. Everything added will stay outside and is easily removable) I am very careful when installing 3rd party stuff and always check before I copy the files. Never had to reinstall TS in 7 years now.

You may want to add the European Asset and Loco Pack to your second install, as Core contains no rolling stock.

You can now compare/copy the folders with your full install. Use a good file manager for that. (7zip, FreeCommander).

Edit: it might be you have accidentally copied a folder to the wrong destination, causing your issue. SteamDB.info is a good source of information where the files are supposed to be.

This is the filelist of the ELAP:
    https://steamdb.info/depot/208300/

Here's how I keep my stuff clean - the ELAP (13,000 files!) is packed into an .ap (except for the german signals, their scripts cannot be executed from within an .ap so the RailNetwork\Signals folder is outside.). Everything that is added will not touch the original files (as the "overwrite" then takes place only in memory.) The other folders you see are from mods. Of course this took some work - but saves from a lot of trouble with 3rd party stuff - can't blame DTG for things going wrong.

Using this method also makes it easy to disable certain assets by just renaming the .ap to a different suffix.
(Note that adding your own .ap to an asset folder does not always work - won't go into detail here on why. It does work in the Kuju folder however and in every Routes folder.)

I managed to fix it. I believe there were some files that weren't meant to be there that for some reason were preventing TS from loading the Kuju assets. The files I suspected were the cause were dated 2010 and didn't reappear after a file verification. To be extra sure I fully uninstalled the Kuju asset packs and deleted the folders before reinstalling them. I'll have to reinstall any mods for Steam packs but at least I don't need to reinstall everything as was my old plan.
