Somehow early on I edited an existing consist and saved it, but have no idea how I did it and have been unable to do it again. What are the steps to building a custom consist?

for quick drives just hit the custom button (when you select engine) and then press new - wait a minute for it to cache or load or whatever it does and then assemble away..

Im not sure if these show up though when your scenario creating I just use RW tools or assemble them live on the track in the editor

    One way I do it
Assemble a train on the track and add a Driver Icon then
    Consist 1.jpg
Click on the box top left next to the Driver Icon and the Squares appear above each coach/loco/wagon in the consist and a box appears
    Consist 2.jpg
Give the train a name and click enter - the train then appears in the Consists list on the left - if you click on the same product provider
